The experience of a pastry chef serving an ice cream parlour could only take into account the most current issues, from specific dietary needs to economic and environmental sustainability.
So all the flavours offered by Protected content are gluten-free, as is the wafer that accompanies them, and many are also vegan (among the classics: pistachio, hazelnut and dark chocolate).
The raw materials used are all the result of scrupulous selection and research in the local area.
