The benefits of our breads are that they are made with 100% wheat flour. Our breads do not require chemical improvers or additives. The secrets of our breads... Our doughs are kneaded slowly and preserve the complex carbohydrates of our flours. Naturally leavened breads have a low glycemic index. The breads contain between 10% and 13% vegetable protein, making them the cereal food richest in protein, ideal for people who follow diets with little or no animal protein. It is important to remember that our breads are made only from flour, water and salt and, therefore, are vegan products. The most immediate benefit is the flavor, which is much more pleasant and subtle than that of commercial yeast bread. Natural yeast creates a crispier crust and large holes in the bread's crumb, giving it a rustic appearance and unforgettable flavor.
